Chocolate for the 4th

IMG_2853IMG_2859IMG_2860

You might be looking at those pictures and thinking… those cupcakes do not look very patriotic, and they don’t. If I am being honest we had a box of chocolate cake mix and I decided I could use the Fourth of July as an excuse to make some cupcakes. Now believe me, I tried to look for red, white and blue sprinkles but couldn’t find them in the grocery store. So now I am left with chocolate cupcakes that don’t scream Fourth of July but I can get past that because they taste so good!

If you are looking for an easy dessert to make for the holiday buy box of cake mix (and icing if you don’t want to make it from scratch) and search for those red, white and blue sprinkles because I know they are out there somewhere!

Gilmore Girls Cookbook

*This book is the unofficial cookbook for Gilmore Girls fans*

I think I squealed a little when I found out this was an actual book. My mom, sister and I are obsessed with Gilmore Girls and have been watching it for years. It started when it was on ABC Family (or freeform?) around dinner time (does anyone else remember that??) and we would sit around the kitchen and watch the episodes. Over the years we have watched the episodes 100000 times and even went as far as to buy all the seven seasons on DVD. Then it came on Netflix so I guess buying the episodes was kind of unnecessary.

THEN NETFLIX MADE MORE EPISODES and it was the best part of 2016. So of course being a Gilmore Girls obsessed person I just had to buy the cookbook. Each recipe reminds you of a different episode and makes you wish you had Suki as your best friend to make you all the recipes. I am definitely going to try and make some of these recipes and pretend I am in Stars Hallow sitting at Lukes Diner.

This book was such a good idea and I love how Kristi Carlson would talk about what episode each recipe is from. If you have the cookbook, what do you think of it? and if you watched the new episodes on Netflix, what did you think of them because I still don’t know what to make of it!!

Summer Birthdays

Most of my families birthdays are in the summer so a happy birthday banner hangs permanently in our house from June to August. This time it was my brothers birthday and all he wanted was to go go-carting and play PlayStation. Oh and a brownie cake….. And I was the one assigned to make it for him. So I took to Pinterest to find out exactly what a brownie cake was and found this cake that was a mix of chocolate cake mix and brownie mix. On top was a chocolate ganache which I poured on the cake and then proceeded to use the leftovers as a dip for pretzels. I am not a big fan of chocolate but this cake was so good!

Food and Sunsets

For the last couple of years my family has spent 4th of July at a lake where we go and watch a parade and fireworks. I always love it because I never have to worry about making plans and can spend the day relaxing by the lake with my family. This year we decided to stay home and try something different so we went to a tiki restaurant that we have never been to. It was so cheesy but that’s what made it fun. There was a band and because the restaurant was on the water we could watch the sunset while eating.

Another night we had a cookout and that’s when I made the cake. I was so worried because it was my first time making angel food cake and I filled it up to the top and it overflowed when it was cooking! It did not look very pretty but it still tasted good so I guess that is all that mattered. If you want to make this I basically made the angel food cake from a box instead of from scratch (so much easier) and then added wipped cream and berries. Hope everyone had a safe and fun 4th of July.

Strawberry frozen yogurt

Hello everyone! I am seriously in love with this new breakfast I have been making myself. I eat it on the weekends and it is really healthy for you! I saw this on Pinterest it looked so yummy! I will have the link to it here. I usually just put in the amount of ingredients I think is right but this is roughly how much I put in of each ingredient.

Ingredients:
1 cup yogurt
1 1/2 cup frozen strawberries
1 TSP honey
Slice of lemon
Tips:
I always put in the yogurt first and then the strawberries. Always put more strawberries that yogurt so it comes out thicker and not liquidy. After you put in all the ingredients you blend it together. I usually blend it for 1 minute or until it looks blended together. I pour it in a jar and then add granola on the top. Granola has been my latest obsession and I eat everyday.
I hope you enjoy this post and leave a comment below if you have any questions. It took me a while to get this recipe to exactly how I liked it so don’t be afraid to tweak it until you like it. Also be sure to follow me on pinterest because i love to pin new recipes on their!
